Beauty and balance are the ancient resting at the heart of Japanese culture and its cuisine. Geisha’s goal is to help return the art of sushi to a state of balance with nature by maintaining a daily commitment to making sustainable menu choices. Sustainability is about making choices that preserve natural systems for future generations. It’s a process of striving to do the right thing every day. For Geisha, sustainability means purchasing products from sources that can maintain or increase long-term production without harming ecosystems. Geisha follows the guidelines set by the Monterey Bay Aquarium’s Seafood Watch program and FishWise, a nonprofit based in Santa Cruz. We make sustainable seafood choices using the best available science, ensuring our wild species come from healthy populations with minimal bycatch, habitat impact, and strong management. For farmed species, we prioritize those with minimal environmental impact, effective management, and minimal use of marine resources in feed. We build relationships with companies that are transparent about their fishing and farming practices, helping us ensure responsible sourcing.
